Stuffed Italian Pepper

The Italian peppers from my garden did not  ripen all so I harvested them before the frost we had last week.  I usually used Italian  sausage when I make stuffed peppers but I did not have it so I just use regular  ground beef and  just  spiced it up  with  onions, tomatoes, cheese, salt and black pepper.


Stuffing the peppers is the favorite part of the job by my kids.


I also made some meatballs which I used for my spaghetti the other day.  Hubby said that the meatballs I made was better than the Italian meatballs that we bought and tried before so I am happy.  From now on, I will just make my own lol.


I used my homemade tomato sauce  when I baked it.  The mushroom baked with it gave it a  twist makes it more tasty. I forgot to take a photo of it when it was done.

Vegetable Soup


I made a pot of vegetable soup the other day.  My daughter was craving for chili  but I did not have ground beef so I asked her if vegetable soup would be fine and she said yes.  I used the chunky tomato sauce that  I canned from our garden and it was really good.  Incorporated  vegetable includes carrots, green peas, lima beans, potatoes, and green beans.  I garnished it with  frito chips and cheese.

Cordon Bleu

We tried  this frozen  Cordon Bleu by Koch.  IT wasn't great but it wasn't bad either.  IT's a great alternative if you  have a busy schedule for the day as you can just bake it in the oven and you have an instant  main course for lunch or dinner.

Lasagna with Eggplant

My husband love lasagna and spaghetti, he can eat these dishes at any time.  Last week, he's been hinting that he wanted some lasagna so I made a pan.  I have some eggplants that I  picked from my garden so I chopped up one big eggplant into finely pieces and cooked it with the  ground beef.  I did not tell him about the eggplant when I served it to him and at the end I asked him how was it and  he told me that it was excellent!  That's when I told him that I incorporated some eggplant in the meat and he  said that it was really good.

My kids are very fond of helping me when I make lasagna as they make the  cheese mixture.  I used our homemade sauce when I cooked the  ground meat and eggplant and it was delicious!

Cupcake Cone Pan

I received a Mrs. Fields cupcake cone pan  and a Scoop-n-Cut  from Love Cooking Company to  try and review.  This is perfect for  birthday parties and school events.  My son's  birthday  always falls on school days so this might be a great option for me to try next year when we bring a treat for his  classmates in the classroom.  As you all may know, I am not really into baking but my daughter and husband are.  As usual, they were the one who  used  the  cupcake cone pan  while I   did my weekend cleaning  yesterday.  

The Scoop-n-Cut  would be  quite useful for the holiday's  baking.  My daughter and husband makes the cookies so this is a great addition for the tools they have in the kitchen.  I love to have the Sto Go Dessert carrier for school events.  I also like to have a new  The Cool Bake  baking sheet.  I will be saving for that.
They used the gluten free muffin mix that we have in our pantry as we did not have a cake mix.
My daughter thought it was fun making it while she pours the  muffin mixture in the cones.  We have never had a cupcake cone pan so it was a big treat for my daughter who really loves baking at a young age.
