Jello with Coconut Sport #A-Spice-A-Day#57

We love jello as dessert here at home. Our favorite flavor is strawberry banana which is this one. I just added coconut sport to it as I did not have fresh strawberry or banana in my kitchen. When I eat jello, I love having some solid texture to it.

  • I made a  small pot of  macaroni soup  for Ms. Burrito's  cold lunch.  I brought it when I went to school for my volunteer   duty.

From Savory to Spicy: Sensational Sausage Suppers



Sausage: it's what's for dinner. Yeah, pork is what's supposed to be what's for dinner - but sausage made from pork is still pork, right? And, there's nothing quite like sausage links to bring back memories of the fair, important family dinners, or just enjoyable casual dining. So, what do you serve with pork? That's easy.



Rice and Beans

If you're going to use something like Edwards sausage links, try cooking them with rice and beans. It's simple, it feels a little exotic, and it's cheap. It's also filling and full of nutrients, thanks to the beans and sausage.

Rice is best cooked by adding at least twice as much water to the pot as rice. So, for example, for a cup of rice you would want at least 2 cups of water, preferably more. The rice will expand a lot, and you can drain off any excess water, and your rice won't get sticky or mushy.

Beans - it's important to soak beans before you cook them. Traditional cultures, and old cookbooks, almost always serve up beans that have been soaked overnight (or longer).


Potatoes


Potatoes are a sure-fire way to contrast the savory taste of sausage. Boil them, bake, or fry them. It really doesn't matter. The important part is that you cook them and serve them with lots and lots of butter - just like mom used to make.


Grilled Veggies


Peppers are almost made for sausage. It's reminiscent of the state fair. You could get a sausage and pepper sandwich that would make your mouth water. Now, you can do it at home, and save yourself the $7 or whatever it costs now.



BBQ Fries

It's a new spin on an old dish. To make fries, you'll need a deep frier. Set the oil temperature to a low setting, say 200 or 300 degrees. Precook cut potatoes for about 3 to 5 minutes. This will cook the inside. Now, take the potatoes out, dry them off, and let them sit for an hour or so. Turn up the heat to 400 or as high as your frier will go, and dunk them in again. It only takes a few minutes. Your fries will come out piping hot and crispy, and yet soft in the middle.

Now, add some BBQ spice. It doesn't have to be fancy. Smoked paprika, onion powder, pepper, salt, and a little garlic.



Soup Stock

Yeah, soup stock. In other words, make sausage soup. You can spice things up a bit by adding celery, carrots, and potatoes to the stock - all staples of any good broth anyway. Start with ox tail or genuine marrow bones. Put a few of these oddball items in a crockpot and add a few pinches of salt and a tablespoon or two or vinegar.

Let it slow-cook overnight and in the morning you'll have fresh beef stock. Why not use the canned stuff? Because real stock contains gelatin - and important protein your body needs that's not in commercial stock. Plus, homemade beef stock tastes amazing.

Listen to me talking about chocolates because honestly, I am not crazy about chocolates but their chocolates are so divinely good!  These truffles are the last ones that I consumed.  I gave some to  our friends and my children's teachers.

  • My day started great today.  I walked my kids to school since my husband has to go to work extra early on Tuesdays.
  • I went for a walk after I dropped them off.  My route was our neighborhood, I walked the same streets twice and then I  proceeded to the post office.  They weren't open yet so I did another lapse around the  shopping  area's parking lot  and back.  By the time, I got my package, the wind was blowing already so my fingers were hurting  walking home.  I got a good exercise though.
  • I made some cabbage roll for dinner.

My daughter watched a video on youtube about making a sandwich with different shapes of egg in it. She did a couple of them yesterday for breakfast.  She intended to make a heart on this one.

  • After the snow has completely melted, It is starting to snow again, sigh. Yesterday was our last day of  nice weather.  I have to go to the school today to help other Moms to scoop ice cream for the students's day, a treat for all the  sweet tooth.
  • Sundae   went  great,  all kids were happy to have their  ice cream treats!
  • The music teacher was very excited to learn about the outcome of what we did last Saturday.  The principal also congratulated me.

Music Notes & Instruments

I have never been to a big a  school of music  before so it was a delight for me to  experienced it with my whole family.  I've seen some  music instruments when my grandfather was still alive and seeing the same instruments again at Mary Pappert's School of Music reminded me of my Lolo.  I've seen one cool student alto saxophone practicing in the hallway and it was a  very nice  and fresh breath of air.  While we were waiting for my daughter's class to finish, I took some pictures of their musically decorated  announcement  on the hallway, really neat.

Cheesy Skillets #A-Spice-A-Day#54

We were suppose to eat at Eat'n Park after we got done from Doquesne but the kids were exhausted that we just got back home. I had one dinner kit in the seller so I made it for a quick meal.  This chicken  and broccoli box has pasta with cream cheese sauce, dried broccoli florets, and seasoning.  I usually add  big chunks of broccoli but I did not have any  in the fridge that day.  This dinner kit saves time  when you want to fix a quick meal.

  • We visited my Dad, he was happy as I helped him prepared his stuffed pepper.  He is not familiar with the new oven that he has so he has a hard time figuring out what to do sometimes especially that he can't hardly see small prints.  While we were there, Ms. Burrito played some songs in the  out-of-tune piano at the my FIL's basement.  She discovered that someone have broken the piano chair in half.
  • We went to the mall after  we cooked Dad's  stuffed pepper.  We bought a pair of  boots for Ms. Burrito and a pair of pants uniform for the little Mister.
  • We  finished our trip with a small grocery shopping.  I grabbed a rotisserie chicken upon check out.
  • We had mashed potatoes, rotisserie chicken,  and  sliced  cucumbers soaked in  balsamic vinegar, a pinch of salt and sugar, and black pepper.  It was a great dinner.  I ate too much I believe, I had two plates of rice.  Yeah, I sabotaged my diet lol.
  • Did some laundry.  Dusted the furniture and hubby ran the vacuum again.  Our dogs shed like crazy.

Cheesy Bread Pizza #A-Spice-A-Day#53

I grabbed a pack of bread rolls one day, sliced them in half, laid it in a pizza pan, and topped it with pepperoni and cheese and voila, instant bread pizza at home, yum! Pizza is not my favorite  fod but once in a while, I crave for it.

  • We woke up early as we have an appointment at Doquesne University for our daughter.
  • Ms. Burrito made some breakfast.
  • We got ready after eating breakfast and headed out to Pittsburgh.  
  • The interview and evaluation went well.  The Director  said that her  skills is  on 4th year level considering that she has only been taking piano lessons for a year.  
  • Hubby  gave Matilda a proper burial at our flower bed.

Birthday Cake by Little Chefs

My Burritos did a great job making Daddy a birthday cake.  Both of them help each other in baking the cake and then decorating it with  icing.  What a way to enjoy a special day  with a sweet treat from the sweetest children in the world!

Pot Roast with Lemon Grass#A-Spice-A-Day#52

Have you every prepared a roast using lemon grass as a spice. I tried it and loved it since. From where I came from, we uses lemon grass in many food that we coked especially the roasted chicken. It makes the meat so tasty and smells so good!  On the other hand, I  wanted to try this pork shoulder  cut, it was okay but my lovelies still prefers  beef when it comes to roast so that would be the last time I use pork.  I just thought of trying it because it was on sale at the store.

Spicy Monterey from Quiznos #A-Spice -A-Day#51

Aside from healthy reasons, I love sub sandwiches from Quiznos or Subway because you can create your own sandwich according to your liking. You will be given a choice what you want in your sandwich and that is what you will get. I love this Spicy Moneterey that I always get from Quiznos.  I always split half with my husband because it is too big and I can't eat the whole thing.

Coffee Creamer #A-Spice-A-Day#50

Do you have a favorite coffee creamer? Hubby and I love Creme Brulee from Coffee Mate.  We get disappointed sometimes because  the store where we buy our groceries doesn't stack too many of them. Sometimes they ran out of stock so we are forced to buy something else.  We tried this Souther Butter Pecan one time, it was okay but we were not crazy about it.

Lipton Orange Spice #A Spice-A-Day#49

My husband and kids love iced tea. We always have fresh brewed tea everyday. I like it too but now as much as they like it. ONce in a while, I find an interesting tea and make it. I got intrigued with this Lipton Orange Spice so I made a hot tea when I had the sniffles.  I squeezed in an orange in it and added  honey to sweeten it.  It was okay.

  • Somebody from the mall called today and told us that Ms. Burrito's name was drawn as one of the $100 gift card winners to the  free games that they have participated last weekend.  Woot!

  • I made a pot of vegetable soup and sauteed mung beans.

My mother used to tell us when we were kids that having a pancit on your birthday signifies long life.  I don't really believe in it but it doesn't hurt to do it right?  We pre-celebrated my husband's birthday since he has to go to work tomorrow.  I only made rice noodles because I was in agony with my migraine.

Laughing Sandwiches #A-Spice-A-Day#46

Our 8 year old chef at home prepared some sandwiches this morning using potato buns, fried spam and bacon, and olives.  She call this the laughing sandwiches, silly girl.  Weekend becomes her regular  schedule  for coking breakfast for us.  It takes time and  causes a lot of mess but I don't mind cleaning after because she is learning in the kitchen.

Valentine Treats #A-Spice-A-Day#45

We visited my  father-in-law  while  Ms. Burrito is having her  piano lessons over at Torrence Music.  We brought Dad  some lasagna for dinner.  He's been hinting that he misses   the kind of lasagna that I make so I made some yesterday and brought him some.  As we were leaving to get the little Miss, my sister-in-law, Chris,  showed up.  She brought Dad some  Valentine treats that she baked.  I took a picture of it  with my phone  before we left.

  • I asked my husband what he wanted for dinner and he requested for lasagna so I  made a pan with the help of my 8 year old  chef.  He and my FIL has been hinting that they want some lasagna and I keep ignoring it lol.  Finally, I made them a pan which made them very happy.
  • I wasn't able to finish the scrap book that I was planning to give my husband as a Valentine's gift but I showed it to him anyway.  I told him that I will try to finish it before our anniversary hehehe.
  • Hubby  gave me a  pot of miniature roses for Valentine's.  I can't wait till the Spring comes so I can add it to my collection of miniature roses in our garden.

Fajita with Olives #A-Spice-A-Day#44

Some of the menus that my husband can eat anytime I make it is chicken fajita, lasagna, spaghetti, caldereta with rice, and barbecue. Lately, he is so into eating chicken fajitas. He requested for it last weekend but I have no bell peppers in the refrigerator so I decided to make it with Oloves Olives. He said it was okay but he still preferred the one I make with bell peppers. Okay there Champ, I gotcha hehehe.

Bottle Gourd #A-Spice-A-Day#43

When I was in the Philippines, I never freeze any vegetable nor use a any frozen veggies. But when I came here, I learned how to freeze veggies  especially the ones that  isn't available in our local  store like this  gourd.  I grew  an upo at our backyard and  got lucky to have only one fruit but it was very long so I chopped it after peeling off the skin and freeze it.  I used all of these already.  It is good with tinola or sinigang or when cooking sardines.

  • I was  sick to my stomach when I discovered the dead body of our female rabbit, Matilda, this morning.  Matilda and Wubzy are part of my daily routine, I feed them everyday so it was a sad moment for me to find out  that she's dead.

A favorite snack during football season.  This small serving cost $5 over at Jimmy Carey Stadium when we watched football last year.  They made a killing of income out of this since  a lot of viewers wants something to snack while watching.  Snacks from outside is not allowed so you really have to buy it from them.

When we were still in Korea, there was a  food place inside the base called Duffy's.  We used to go there on Fridays because their chicken wings are only ten cents a piece.  Vegetable salad has always been a favorite pair  when I prepare  chicken wings at home.

Dressing Up

My son is only 7 but he is already very  conscious of how he looks.  He likes to dress up even when at home.  We haven't found a tuxedo vest for his   upcoming communion yet but we will look into it soon.  He still have  another year anyway.  We almost bought a tuxedo for him at the store   last month but judging of how fast he grows, we hold off from buying it  because he might outgrow on it before he can  use it.  Below is the dressy clothes we bought him last Christmas.

Quiznos Date #A-Spice-A-Day #40

Ever since we have our kids, hubby and I rarely go on a date  by ourselves.  We always have our kids everywhere we go.  I think in ten years, we only went  on a date twice and that was because my  FIL and SIL had our  Burritos.  We  never really  leave the kids to day care or a baby sitter.  Anyway,  few days before Christmas, hubby took a day off so we can finish shopping for the kids gifts.  It gave us a little time for ourselves.  We  dropped by at Quiznos and try their healthy subs.  That was my very first time eating at Quiznos and I must say that I like them better than  Subway.  Since we liked our first time there, we took the kids  a couple of times there already when we go to the mall and they liked it too.

Cantaloupe #A-Spice-A-Day#39

One of the many fruits that my kids and husband love to snack on is cantaloupe.  I like cantaloupe too and I love it in  shakes with milk, yum!  I was bloghopping one day  and saw  a water melon that they carved into a basket and put the scooped  watermelon meat in it.  I thought it was pretty neat so I did it with the cantaloupe that we had, the kids had fun  scooping the meat.

Because of frigid  temperature, I have been making  different kinds of soup to warm up our body.  One thing that I miss making though is tinola or chicken ginger soup.  I don't have the right ingredients/vegetable.  I love using chayote squash but the bottle gourd  is good too.

Frozen Milkfish #A-Spice-A-Day#37

Once in a while, I buy milkfish at the Asian store when we go to Pittsburgh. It's frozen but that's all you can buy there, no fresh fish at all.  This wasn't boneless but it filled up my cravings.  Hubby and kids does not like bangus or milkfish so I am the only one who eats it.  To eliminate the  strong taste of it, I always  marinade it with  orange juice and onions before frying it.

  • There was a two hour delay today so I had to walk my kids to school.  ON my way home, our son's teacher's car got stuck in the snow so I went back to school, got a shovel and shoveled the snow out of the way of my son's teacher.  An old guy helped me also.  I wish the school could have  assigned someone to clear up their driveway earlier so no one got stuck.  Anyway, the kids and I had fun walking on top of an an icy snowy.
  • I made  macaroni soup as  requested by Ms. Burrito, rigatoni as requested by  the little mister, and hubby  was requesting  chicken fajita but I told him to just eat  rigatoni with  our son lol.  Sorry hon, I did not have enough time to make the fajita.  Mavbe tomorrow, I will make you some.

Vegetable Soup #A-Spice-A-Day#36

I made a pot of vegetable soup for dinner  and  everyone in my abode loved it.  See, when I cook it's either HIT or MISS.  This time, hubby said I hit the home run and I was a happy  home chef lol.  I have  a few days old  potato buns that nobody wants to eat so I    cut them in half, buttered them, sprinkled some parsley  on top and baked it for ten minutes, it was  yummy too.  My son wanted more of the  potato buns but there is no more.

  • The kids are off today due to severe weather condition.  Keeping them busy was a bit tough but we managed to have fun.
  • I feel bad that  even on crappy weather day, my husband has to go to work.  I just wish that he can enjoy his retirement already but since we started our family a little bit late, he still have to get  a new job after retiring.  We're trying to save up for the kids college education so  he can at least retire for the second time a bit early.

I've seen this chandelier-like display of mugs at JCPenny.  Me and the kids were sitting in a rest area  by the home department and we happen to glanced at this display.  I was thinking while I was looking at it, what it the pole that is holding all the weight gave in?  That would make a  big mess and hurt to anyone if  someone happen to be underneath it.

  • I went for a walk after  dropping off the kids to school.  As crazy as it sounds, being 20 and some degrees outside, I needed  the fresh air.  I felt good after the walk although my fingers felt like they were falling off lol.

  • Hubby  said that  Mr. Burrito is getting better with his gymnastic skills.  We don't go  with them anymore as we want the boys to have  "alone time" bonding.

I like it that it's deep  so the  oil does not  splatter when you cook.  
Unlike the stainless steel that I previously have from them, I can cook a good amount of food  on this pan without spilling some of them on the stove.

Cooking Duo #A-Spice-A-Day#34

After I cut my hair last Sunday, me and my daughter cooked breakfast together.  She normally coked  right away when she woke up but  glad that she didn't that day, it gave us time to bond in the kitchen.  Cooking with my daughter is fun.  Hubby was inspired to take photos of us but the little Miss was not in the mood for photos.

  • Our daughter  has been stressing out every Monday.  She is not liking her computer class as it is focused on "Think Thru Math".  My daughter is really good in Math, what she doesn't like is the fact that in Think Thru Math, they have to figure out every problem by themselves.  When she can't understand the instruction, she gets frustrated because the teacher does not explains or offer to help.  It bothers me because she doesn't sleep weel during Sunday nights so as a result, she is cranky on Monday morning.  Hubby is planning to talk to the teacher  but we talked to our daughter first.  We told her to toughen up and try her very best to figure things out.  We will see.
