Menudo

We had menudo for lunch the other day. I prefer menudo over caldereta because I like pork more than beef. My husband love the latter though. Before, he wasn't crazy about the menudo because of the liver in it but lately he is starting to adopt to it and I'm glad that he does because that's one of my favorite ingredients in menudo hehehe.

Pork Menudo Recipe


Estimated preparation & cooking time: 50 minutes

Menudo Ingredients:

  • 1/2 kilo pork (cut into small chunks)

  • 1/4 kilo pork liver (cut into small cubes)

  • 5 pieces chorizo Bilbao (also cut in small pieces)

  • 4 potatoes (peeled, cut in small cubes, fried)

  • 1 green and 1 red bell pepper (diced)

  • 1 cup chickpeas

  • 1/4 cup raisins

  • 1/2 teaspoon paprika

  • 1 cup pork or chicken stock

  • 2 teaspoons of patis (fish sauce)

  • 3 tablespoons oil

  • 1 tablespoon atsuete oil (optional)

  • 3 tomatoes (diced)

  • 1 small head of garlic (minced)

  • 1 medium size onion (diced)

Menudo Cooking Instructions:

  • In a pan or wok, heat cooking oil and atsuete oil.

  • Saute garlic, onion. Then add the pork, liver, chorizo de Bilabo, tomatoes, bell pepper, paprika, patis and the stock.

  • Cover and bring to a boil. Simmer for 20 minutes or until the pork is tender.

  • Add the chickpeas, potatoes and raisins. Boil of another 2 minutes.

  • Salt and pepper to taste.

  • Serve hot with white rice.

That's cute, he's adapting the spices. However, my GH can't adapt anything strange in his knowledge. Pero, he tried once in awhile.

I love menudo, I'm crazy about menudo. But the problem is, my kids, like your hubby, hate liver and I can't just imagine making a menudo without liver in it. Sigh, I just cannot make a dish all for myself. When my wife was still here, we used to delight ourselves with menudo but since she's in the States now, I was not able to cook and taste menudo again for more than three years now, waaaah, lol. waaa....salap naman nito sis...hubby and I love both...pero alam mo ba when I make menudo I don't add liver in it...waaa...hahhaaha! looks yummy....meron paba? gagawa ako ng caldereta mamaya....ehehe...:)

This looks REALLY good! I love pork too, but don't care for liver at all. I could probably tolerate it in little chunks mixed in though. LOL

Pareho tayo , mas gusto ko ang pork menudo kesa beef. kasi ang pork may konting fat, si hubby kakain din menudo kapag wala na siyang ibang choice. I also cook beef menudo, preo parang di kasing sarap ng pork. at ayaw dn ni hubby ng atay, hay, ang arte.. yun nga ang fave ko eh.
