Rigatoni with Italian Sausage and Kale

I never thought I would like Kale.  I  should have tried it  when I first came here but never really enticed to do so since I wasn't familiar with it.  I read some raves  about how Kale is like a super food so I thought of trying it.  LO and behold, I love it now and  is a regular greens in my kitchen.  I love  putting it in soup, in noodles, and just about anything where I use spinach in a dish.  
 This one here, I tried to incorporate it in  making the rigatoni.  Below is a simple recipe of  what I made.
Ingredients:
  • 1 lb Italian Sausage
  • 1 pack Rigatoni noodles
  • 1 medium size onion (chopped)
  • 1 large tomato sliced
  • Salt and Pepper to taste
  • 1 cup of shredded cheese (optional)

 
Procedure:
  • Boil  the rigatoni according to  direction from the box
  • Brown the Italian sausage into a skillet.  
  • Add the onion, tomatoes, and   kale.  Sprinkle salt and mix it all together.
  • When everything is cooked, add the  rigatoni and sprinkle some pepper and the cheese.

We love pasta and spinach combinations. One of our favorites is pairing this with ground beef and fresh veggies in a tomato sauce base. Plus the spicier the better. Yum!

OMG, this looks fantastic!! I never thought to add kale to my pasta.. I'm going to try to make this soon. Great way to include some greens in a carb-heavy meal! I'm not a huge fan of spicy though, so I would porbably tone it down a little but it still looks delicious :)

Oh this looks so good! And it seems so simple to make. I love just about anything with spinach in it, and my husband loves alfredo, so we'll have to make a version of this. Thanks for sharing!

Wow this looks so good. I haven't ever made anything with kale before. Weird, I know. But this looks great. My kids are huge pasta fans, and I'm sure they would love this. So I may need to give it a try. I can't say I've ever eaten kale myself, my bird enjoys it so why wouldn't we? Looks. Super good!

Yum! This looks so good. But lately I've been trying meatless dishes so I just might try making that but using tofu. I wonder how that would taste like....

This meal is right up my family's ally. My boys absolutely love sausage and pasta, so this would be perfect to make. I like your addition of kale--it is something I like when cooked with garlic--but not so much in its raw form.

I've tried kale in numerous ways but never like this before. I'm thinking I will be making this some time next week. Kale chips btw is also pretty good and so very easy to make too.

I have never had kale in a pasta dish before, I normally use spinach. But this looks really good, the kids wouldn't know the difference. We always use kale in green juices, the kids love kale in them!

This is a comfort food that I would love to eat anytime. I love kale and my family does too. It has so many health benefits including having vitamins A, C, and K, protein, folate (vitamin B), and it also improve diabetes (blood glucose). Thanks for sharing this recipe!

oh I love this pasta combination but i will be honest, kale has never reached the top to even be considered to be in my pasta so this is new and awesome for me I might just try it out.
