Gluten-Free Pancakes

Hi there, it's me, Ms. Burrito,  Mommy's (Chubskulit Rose) co-author at Kids e-Connection  blog .  I am excited to be able to blog again  now that I am on school break.  I am sure that Mommy mentioned here (maybe a lot) that I like to bake and once in a while cook  breakfast for them.  Last weekend, I made them pancakes and it is gluten-free.

Gluten Free Foods

I gathered some  information from WebMD website about gluten free foods because I was curious.  I want to know what is the purpose of a gluten free diet.  I have learned that some people are born with a disease called celiac.  This is a disease in which your body has an abnormal response to gluten.  Eating gluten will damage the small intestines which in turn prevent important nutrients and vitamins from being taken into the body.  
My Mom garnished the pancakes with  fresh slices of strawberries.  

Gluten Free Pancakes

I used a recipe I found from Allrecipes.com on YouTube.  I just substituted the flour  with Glutino All Purpose Flour.  With a little help from mom on cooking the pancakes they came out pretty good.  Here is some instructions on how to make some delicious, gluten free pancakes:

Ingredients

  • 1 cup of  Flour (substituted with Glutino All Purpose Flour)
  • 2 Tbsp of Baking Powder
  • 1 tsp of salt
  • 2 Tbsp Sugar
  • 1 egg
  • 1 cup of milk
  • 2 Tbsp of vegetable oil
First, put the flour, baking powder, salt, and sugar in a bowl.  Whisk together until evenly combined.  Then, make a hole, or well, in the middle of the flour.  Add inside it, the milk, and the egg and beat until fluffy.  Finally, add your oil.  Heat your pan to medium/low. Add some butter or oil so the pancakes don't stick.  Add a small amount of batter and brown on each side.  Add syrup and garnish with fresh fruit if wanted.  Then, you have some delicious and gluten free pancakes!
My Diet
My diet isn't completely gluten free because I don't have celiac disease.  It is actually not that healthy for people without celiac to have a complete gluten free diet.  That is because your body does not receive the right amount of protein  that is in gluten.  It is healthy to cut back on gluten but not go on completely gluten-free diet if you don not have  the disease (again, if you do have celiac disease, gluten free is for you).    

We ate the pancake with fresh strawberries and scrambled eggs.  Mommy also put some dulce de leche in between those pancakes  and drizzle some syrup on top.

Well done with the presentation. The first pictures made me think of a flower. And also, you can never go wrong with a plateful of egg, pancakes, and strawberries.

These look like really good pancakes. I still haven't gotten on the bandwagon with eating gluten free stuff. However, I know it is a healthier way to eat.

These look delicious. I have considered trying to cut gluten out of my diet but I figured it would severely limit what I could eat. I keep seeing all these great gluten free recipe. I might have to try it. That is awesome that you are learning to blog.
