I married my Knight!

When my father got addicted to drinking too much alcohol, the scene in our house when he's drunk is undesirable. My parents were always arguing about every little thing. So growing up, I promised myself that I would never marry a man that has drinking problem. Most of the guys that I dated then are all free from alcohol problem. Another thing that I dream of a man to marry was someone that has a permanent job that could sustain a family. I did not dream of marrying a rich or handsome man, for me as long as I love him and he loves me back, that would be it.

Who would have thought that God will give me more than what I asked for. Never in my imagination marrying a foreigner lol. It's funny because when I was in elementary, all I wanted is to be able to learn how to speak tagalog so I could go to Manila and work there. See, God is great because He granted me a chance to learn how to speak English. I am not fluent in English lingo but at least I could communicate well to my husband and kids lol.

How about you, can you say that you married your dream man? For me, I married my Knight!

Gardening on the Weekend

Our weekend was pretty busy. Hubby spent his weekend installing the new shutters that he ordered online. Our old ones fell off when we were in Korea so we have to replace them. He wasn't able to finish it since the one package they sent was incomplete, so we have to wait till the additional parts arrive. I did some gardening with the kids, I removed the old petals of my rose in front of the house.
Roses provide beauty even when the flowers fell off already.
While doing my gardening, my son relaxes in front of the garage using the folding chair that Pap gave them.

Then we visited my FIL afterwards. I baked some shrimp pop corn for snack.

First Impression with My In-Laws

Meeting my in-laws for the first is nerve wracking. I did not know what to think but I rely on my husband's stories about them and true enough, they are very down -to-earth person and free spirited. I think, when I was still in Pinas, single and asking God why nobody is taking me seriously, God probably told me "Rose, just wait for the right person alright?" I am glad that I met that right person, because his family is way way more than I ever expected.

Let's start with Jen, she is my sister-in-law's only daughter. She was the one I first met at the airport because she fetched me and John when we arrived. She is really really nice and I felt that right away in our first meeting.

Then when we arrived home, they introduced me to Chris, my SIL. My SIL is a very nice, generous, loving, kind person you could ever meet. When I was pregnant, she was the one taking me to the doctor when John couldn't make it. Then she also accompanied me a couple of times during Rylie's pedia appointment. I feel bad because the employees there called her Rylie's grandma before, sorry about that Chris. But I told them that Chris is my SIL.

My Brothers-in-law are really nice too. I am more comfortable talking with John's eldest brother Dave because he is very outgoing and very friendly. My Bil Rick is also nice but he is very opinionated hehehe. So I kinda always watch out what I tell him lol. Their wives are super nice too!

Lastly, I couldn't ask for more because my FIL is the best FIL you could ever have. He is a great father to them and he treats me like one of his real kids. Thanks Dad! so there's my first impression.

Father's Day Foodies

Our father's day celebration went great. Everyone in the family came to visit Dad and we had a blast. Chris and Gail brought some Ice Cream cake and Chris made a big pot of chili dogs (forgot to take a pic of the CD heheh).

Fence is Awesome

Having the fence up makes me feel secure about letting my kids play at the back of the house even if I am not there with them. It is also a good for the dogs as I don't have to guard when they have to do their business outside. I hope that the stain and wood treatment that was applied to it will last for long. Hubby said that during the heavy wind and thunderstorm, the fence shifted a little bit but aside from that, all is good for having a fence.

It's funny because when the fence was up, I thought that the expense ended but hubby said it needs treatment and stain so it will last a little longer. Some household that has damage fence hires a company to repair it.

Birthday Pie & Cake

I am not fond of eating cake, so I told hubby that I don't want any cake on my birthday. He listened to me and did not buy one but Rylie scolded him lol. She said "Dad, there's no decoration, no cake, no nothing, it's BORING!"

It was my fault because I did not take consideration of how kids feel whenever there's birthday. For them, cake is one of the essentials to celebrate ones birthday. But anyhow, we visited my FIL during the afternoon of my birthday, there's a coconut pie there. I took a slice and put candles in it so Rylie would be satisfied lol.
During our family day (Sunday), hubby went to the store and bought a cake since Rylie wouldn't light up with the idea that I gotta have cake.. Period!

Me and Chris blew the candles together since we shared the same birthday month.

So there, my dear darling princess, your wish came true hehehe.

Jello

My father-in-law oftentimes makes gelatin dessert out of the Jello pack and my daughter and I loves it! When we went to the store last week, I grabbed two packs of them and made it in our home. Rylie and I finished eating it in two days lol. I forgot to take a photo when it was still in the container. This was the last few bites tat I took shot of.

Fresh Corn

We found a file of freshly harvested corn at Walmart last week or 33 cents a piece. I grabbed some and we cooked it at my FIL's house as we are scheduled to visit after store. They were really good and sweet.
Our son loved it so much!

Laing, Pancit, and Adobong Sitaw

One of my friends here in Weirton who is also a b bicolana called me and said that she has some goodies to share. So the day after my birthday, we went to her house and picked the goodies up. She gave me Pancit Bato (the noodles that I love from Bicol), Dahon ng Gabi (taro leaves), tinapang bangus (smoked milkfish), and some cooking mix. It was a perfect timing because I was craving for laing.

I let hubby try the pancit bato, I think if I am not mistaken, this is called pancit bato as it is originally made in Bato Cam. Sur. Of all the pancit, this is my favorite of all time.
Then I made the laing,YUM! Ate Agnes told me to put the bangus to make it tasty but I decided to just put a can of sardines and pork meat in it. Making laing is very easy, all you need is coconut milk (3 cans for a pack of taro leaves), hot peppers (I put 4 jalapeños), shrimp paste (optional), ginger, onion and that's it.

You can cook the meat by sauteing it or you can just let it cook in the coconut milk. Do you eat laing?

Since hubby don't like the "marijuana", that's how he calls the taro leaves lol, I made him some adobong sitaw.

Sometimes, when I am in the mood to cook, I cook 2 or three menus but when Ms. Lazy is visiting me, I don't cook at all hahaha.

Lasagna for my Birthday

Lasagna is the only menu I cooked during my birthday. The kids invited Dad over and I was so happy that he did came. We stayed at home and visited FIL late in the afternoon! Making lasagna is fun for me and the kids. They always helped me make the cheese and other ingredients. They do the sprinkling and spreading of mixes.

Father's Day Plan

We don't really have special plan for father's day rather than spending it with our dear Dad Pooch. Me and the kids already gave John the present a couple of weeks ago so no more shopping spree for us lol.. Anyhow, below are some photos I took when we visited Dad the other day. It's precious to look at the three generations.

EJ is the most sweet child, he is sweeter than ate lol. He wants to hug, kiss and cuddle all the time. Naku gugwardyahan ko to pag teens na at baka makabuntis agad hahaha. Hay kung ano ano iniisip ko, 1:26 na kasi. O sya goodnight everyone!
