Stuffed Pepper for Pap

Pap's sweet pepper in his garden are getting ripe so I decided to picked them and ask my Mom if we could stuff them. Mommy agreed so she removed the seeds out while my brother and I prepare the sausage and stuff. I added two eggs in the Italian sausage and bread crumbs. I started mixing it and then later on my brother helped me.

Of course Mommy has to take photos so that we would remember this when we grow up.

Then after we stuffed the pepper (with Mommy's help), we put it in the container and freeze it so that Pap can just bake it whenever he is in the mood for that kind of dish. Hope you like it Pap as it is made of love. Please watch the video that my Mom took while I was mixing the sausage with other ingredients.

Salsa and Tinapa

I cooked the last pack of tinapa (smoked fish) that we bought the last time we went to the Oriental store in Pittsburgh. We planned to get as many as we could but there were only two packs left in the store. The tinapa that were available were not the ones that hubby likes but we bought it anyway. He likes the galunggong (round scad) but tamban was the only available.

Anyhow, I made my own version of salsa. We have so many cherry tomatoes so that was the one I used before they get bad. I put some pickled hot pepper and scallions. added some black peppers and the soy sauce with calamansi (lemon).
I tell you salsa pa lang busog na ako hahaha.

Hubby and I ate it for breakfast. I felt bad because I did not make a new pot of rice and his first serving is a little short lol. Whenever we eat tinapa, we always need more rice, sarap kasi eh.

Pakbet

We had some guest yesterday who came over to our house and brought us some veggies. This is my first time seeing this long "upo" not sure what it's called in English wahhhhhhhhh but look how long it is. Give me a buzz if you want some and "ill give t3/4 of that lol. Thanks a lot ate Anna!

She also borught us some peppers and a butternut squash. Thanks for sis Yami for teaching me how to cook pakbet. I cut up the veggies and put half of it in the freezer, hopefully I could still use it later. That's my first time freezing veggies.

I only pt sitaw (string beans), talong (eggplanbt), and kalabasa (squash) on my pakbet.

Here's my first attempt of cooking pakbet, it is incomplete but it tasted good. Hubby does not like pakbet because of bagoong.
Behold, this is a censored photo lol. Hubby's humored ran yesterday and did this pose for me hahaha.
Have a nice weekend everyone.

Fresh from the garden

I did not have a formal vegetable garden this year because I did not really intend to put up one. I do however had two tomato plants and some pepper plants from the seeds that I grew. I am lucky because friends love to give us fresh veggies from the garden. A couple of weeks ago, a friend from Ohio drove down to one of our friends here in the area and she brought us some bittermelon, eggplant, and bottle gourd. The tomatoes on the first pic was from my plants beside our house. Thanks a lot Norie!

Then yesterday, my Filipina friend who live nearby us brought me some freshly picked eggplants, string beans and two packages of soup mix. Thanks ate Agnes!

And then today, our neighbor gave us tow big bowls of cherry tomatoes and bell peppers (green, yellow, and red). Oh, I am spoiled with good friends and I am so grateful about that.

Rice Balls Ginataan

My daughter is very fond of rice balls and my husband loves ginataan. To make both of them happy, I make what they love in one menu. This photos were taken a couple of weeks ago when we got our asian goodies in Pittsburgh. The kids had so much fun in helping me to make the ginataan. They were the one who made the rice balls.
See how seriously and diligently they're working on to form the rice balls?

It was EJ's first time to help us in preparing the ginataan. Although he doesn't want to try to eat it when it's cooked, at least he is interested enough to help us and have fun.
Here's the yummy ginataan which my hubby called Guinobatan (one town in Albay Province) lol. The ingredients were banana (saba in jar), sweet potato (asian kamote, yung di malata), taro (gabi), jackfruit, condensed milk, and coconut milk. I did not include tapioca this time.

Our Dinner Date

My husband treat me for a dinner date at one of the Japanese Steakhouse in our area. The funny thing was, when he was taking a shower, I ate a big plate of rice and my maanghang na gulay so I was full when we went to the resto lol. Anyhow, here is what her ordered.
This wasabi fried his tongue lol, he said that it was so spicy.
He ate eel and cucumber roll and steak stir fry with rice.
Since I was full, I just ordered an avocado salad.

Have a safe and fun weekend everyone.

Fresh Tomatoes

Every time we visit my father-in-law, me and daughter always go to his garden and picked some ripe tomatoes. He has lots of them there. He already canned 15 quarts of his harvest. I love canned tomatoes because is pretty good during winter on chili and other dishes such as lasagna and spaghetti.
Parenting Tip of the Day (a newsletter I received from parents.com).

Kids should get no more than 40 grams of fat, 1500 milligrams of sodium, and 32 grams of sugar a day. Additives that lurk -- even in snacks you’ve always considered “healthy” -- can push kids over those daily limits. We’ve decoded labels on seven staple foods: yogurt, crackers, dried fruit, cereal, oatmeal packets, wheat bread, and deli turkey.

Zucchini - Steamed

Hey there food trippers, how do you prepare a zucchini? I learned this dish from my SIL Chris. She steam zucchini with tomatoes, onions, bell pepper, bacon bits, alt and pepper to taste and top it with mozzarella cheese when done. Another way to prepare it is by frying it like a tempura or something (battered zucchini).

It's very easy to prepare and it's faster. It is the healthy way to prepare and it is so yummy!

Have a safe and fun weekend everyone.

Birds Feeder

I am so exhausted right now that I can just kill over lol. Aside from the fact that I did not have enough sleep last night, we also went for 4 miles walk today at Panhandle Trail. It was so good though, I actually sweat a lot. Now I am trying to update while trying to finish my laundry wahhh.
I spotted these two lovely bird's feeder outside my Dentist's office last Friday for my partial trial/fit.
Hope everyone has a good start of the month.
