Stuffed Jalapeño and Portabela Mushroom with Tuna and an Awesome Grilling Rack

I love  stuffed peppers especially jalapeño  because it is spicy.  The only issue I had with  jalapeño is when coring it out  because I don't like wearing gloves when I am in the kitchen.  Luckily for me, Cavetools  have the perfect tool for me to have, the  Jalapeno Grill Rack and Pepper Corer Tool.   I was very excited when they sent me this because I always use peppers when I cook and most of the times, I remove the seeds  because my kids can't handle  very spicy food.
As soon as I received the items, I went to the store  and bought some  jalapeños because my hot peppers in the garden are not ready to pick yet.    I also got some tuna so I can make one of my husband's favorite   dishes. I normally  cut   jalapeños in halves and  stuffed it with tuna then   bake it.  But now that I have the pepper grill rack, I can actually stuffed  it whole then grill it.
What I like about this  set is that you can  make delicious grilled pepper recipes Like Bacon Wrapped or cream cheese stuffed Jalapeno poppers on your pepper cooker curved stainless steel pepper corer .  You can flawlessly pulls out Jalapeno cores and serrated edge slices off pepper tops with ease.
Here's a simple recipe for this delicious  grilled jalapeños.
Ingredients:

  • 12 medium size jalapeño
  • 2 small cans of tuna
  • 1 medium shallot
  • 1/4 cup chopped scallions
  • 1 tbsp pineapple chunk
  • 1/2 cup  miracle whip or mayo
  • 2 Portabela Mushroom
  • Salt and Pepper 
  • 1/2 cup  mozzarella cheese for topping

Procedure:

  • Wash the jalapeño and start coring  them.

See how easy it  removed  the core?  I think my favorite of this set is the corer because I can use it all the time.
Now I don't have to  worry about cutting the  pepper in half just to remove the core.  I can prepare it as a whole without a fuzz.

  • Once the core is out, put them on the rack while you are preparing the  stuffing.

  • Combine all the ingredients for the stuffing; mayo, pineapple, scallion, shallots, tuna, and salt and pepper.


  • Remove the stem of the portabela mushroom.


  • Then stuffed both the jalapeño and mushroom with the tuna mix.


  • Then when you're done stuffing them,  just put them in the  grill and  wait for it to cook away.

I included the portabela mushroom for the kids.  My son can't handle spicy food but my daughter loves it.  She ate  half of the mushroom and  also had some jalapeño.
