Fajita #A-Spice-A-Day #1

We  love to eat Mexican food once in a while but going out to eat is a bit expensive.  Gladly, you can buy seasoning mix and other  ingredients to make  it at home.
When I have left over in the fridge, I think of some dishes that I can  use it for so we don't have to eat left over the next day.  LIke the grilled chicken leftover  that we had in the fridge.  I used it to make fajita.  This was my first time making this dish and I was surprised that  they loved it!  Making fajita is fast and easy.  You can see my ingredients above.  As long as you have the seasoning mix and tortillas, you are good to go.
All you have to do is to saute the ingredients, add the seasoning and water and let it cook until the chicken is tender, in my case, the chicken was already cooked so it was quick.  This is a kind of dish that will save you time.  I remember making this after we  went to the store and had our grocery shopping.  I thought that when we come back home, the roast that I was  making was already done but I was wrong so I  whipped this up and we had an instant lunch.
This kind of dish is fun to do with your kids as well.  They can help you prepare it.
When you are done cooking the  chicken filling.  You need to  warm up your tortillas in a  microwave and start filling it up with the chicken.  You can add  sour cream (we preferred no to) and top it off with  cheese.
It was really delicious.  Since the first time was a hit, I did it again when we had a left-over steak.  Hubby said that the steak was better but since I like chicken, I like the former much better lol.
When you have left over and you don't want your lovelies to  eat the same thing, try to make another dish out of it.  That's what I do  here in my kitchen.

I will start doing my A Spice A Day  Journal again in this blog.  I did this  last 2012 but did not make it last year.  I kind of miss it since I can go back to it whenever I want to remember something we did on a specific day.

A Spice A Day #1 - January 1, 2014

  • We visited my Father-in-Law after we ate breakfast.
  • We came back home and  spent the rest of the day at home.
  • I made some lumpia as requested by my daughter.
  • I ran on the treadmill after I made lumpia.  Burned 250 calories, not enough but it's good to start the new year for my fitness goal this year.
  • We went to bed early.

Just sometimes I ate a spicy Mexican food, that I really swore not to eat again. But as always, I ordered with such spiciness, just plain.

Yum, that looks so delicious with all the cheese in it. I'll ask my sister to look this up. She's the chef in the house. :)

Preparing fajita at home would be a lot cheaper especially for large groups.

This is one yummy food. I love mexican food too, luckily i have a mexican friend who cooks food for me. She makes fried mexican taco, i was delish. This one looks good and your daughter is such a big helper
