Egg Fritata with Veggies Recipe

Cooking eggs for breakfast  can be  boring if you don't change how you prepare them.  Whenever I have enough time, I always incorporate veggies into omelets and this time I made fritata.   Instead of  frying it, I baked it into the oven and it was delicious!
Ingredients:
  • 4 eggs
  • 2 mini cucumbers
  • 1 medium sized tomato
  • 1 hotdog or you can use  smoked sausage whichever you prefer
  • parsley, fresh or dried
  • salt and pepper
  • 1/2 cup of mozzarella cheese
  • scallions

Preparations:

  • Spray  a pie pan or any dish you want to use with cooking oil spray.  
  • In a bowl, break and  mix the eggs.  Transfer it to the pie pan.
  • Sliced all the ingredients and incorporate it into the egg.
  • Bake for 15-20  minutes in a 350 degrees  oven

 What I like about  this is, I don't have to use a lot of oil and I just basically put all the ingredients in a pie pan and put it in the oven.  It's quick and easy and it's delicious!
 We ate it with toasted bread with cheese and fruits for dessert.
My kids can be picky sometimes but  when they see how colorful and neatly arranged the food is, their appetite is always high.

I love Fritata but surprisingly I never made it thinking it would be too difficult. Your recipe makes it look so easy!

Good for you! No matter how our food looks pretty or nice, if they see vegetables on it, they won't eat it. They are such a picky eater.
